Can the truffle perish during the transport?
No. The fresh truffle is a perishable product, but maintains its freshness until 7 days after its extraction from the soil. The truffle is harvested and sent via express transport in a special packaging, preserving its freshness. The usual delivery time from the moment of shipment is 24 hours.
How can I preserve the truffle and how much time do I have to consume it?:
When you receive the truffle, you should keep it in the refrigerator, at a temperature between 4 and 6ºC. We recommend its consumption at the latest within 4 days after delivery.
If it is going to take you several days to consume the fresh truffle, we recommend that you keep it in a sealed container inside the fridge, wrapped in kitchen paper. Do not use polystyrene packaging, since it will create insulation from the cold.
You need to change the paper around the truffle every other day, to avoid excess humidity inside the recipient. This could lead to mould, growing on the truffle's surface. Remember that the truffle has been washed and doesn't have a protective layer of earth around it. When exposed to mould, the truffle's flavour can be altered.
