Oliveri processes its artichokes one per year, in springtime. The challenge lays in enclosing all the freshly picked vegetable's perfumes and flavours during the canning process. The whole artichoke hearts are shortly steamed, in order not to lose there fleshy texture. They are packaged with olive oil extra virgin, confit and ready to be served.
